Purchasing meat in bulk, such as a 1/2 steer, can seem intimidating at first. However, understanding the cuts of meat included, as well as the process, makes it easier. A quarter cow typically equates to approximately 180 + pounds of meat, depending on the size of the animal.

What Does a 1/2 Steer Include?

When you buy a 1/2 steer, you will receive a variety of beef cuts. These typically include:

  • Ground Beef: An essential staple in many kitchens, ground beef can be used in a range of recipes, from burgers to casseroles.
  • Steaks: Expect cuts like ribeye, sirloin, and T-bone, each offering distinct flavors and textures.
  • Roasts: These include cuts such as chuck roast and rump roast, perfect for slow-cooking and feeding a family.
  • Short Ribs: Delicious and rich in flavor, short ribs are perfect for barbecuing and braising.

The exact combination of cuts may vary but are fairly constant.
